Raw Tacos

Back in March I worked on a retreat in Somerset and learned some fantastic recipes which I couldn’t not share! Thanks to The Core Juicery this is a staple recipe in our house hold now.

Filling: Blend the pecan nuts, sun-dried tomatoes and smoked paprika until you have a thich meat like texture.

Salsa: Finely dice up tomatoes, red onion and peppers. Add lime juice and thinly chop up your coriander into the salsa mix

Cashew Cheese: Let Cashews soak for 2-3 hours before blending then add lemon, nutritional yeast, garlic powder, onion powder and season with saltt and pepper - add 150ml of water to help blend together and create a ‘cheese’ like consistency.

Guac: smash your avocados, squeeze in some lime, dice some onion and tomatoes and mix!

Build your taco by laying the lettuce gems out on your plate, add the meat mix, salasa and cheese onto!

2x baby gem lettuce

500g pecan nuts

200g sun-dried tomatoes in oil (drain 80% of the oil)

2 x fresh tomatoes

1 x red onion

2x red peppers diced

1 x bunch of fresh coriander

1x juiced lime

300g cashew nuts

3x measuring cup of nutritional yeast

1 x tsp garlic powder

1x tsp onion powder

2x Haas avocados

1x tinned sweetcorn

200g black beans

salt and pepper to taste
